lime to the aid...

One of my favorite things to get at the farmers market is this amazing limeade drink. Its dreadfully pricey though so I took on the challenge of just making it myself to give some relief on these scorching hot summer days.
It was pretty simple actually,... the measurements can vary depending on what you prefer ..i like my limeade nice n' sour compared to the majority of people.

MINT LIMEADE
1/2 c raw sugar
10 limes
1-2 c water (depends how diluted you want it)
ice ice baby
fresh mint










I served my drink alongside some marvelous lil' cheesecake bites.

BERRY CHEESECAKE BITES
crust:
1/2 c oatmeal
1/2 c brown sugar
1/2 c whole wheat pastry flour
1/2 c butter (melted/softened)
1-2 tbs water

filling:
2-3 tbs sour cream
8 oz cream cheese
1 egg
1-2 tsp vanilla
1/3-1/2 c sugar

topping:
some frozen berries of your choice :)

combine crust, and filling in separate bowls. prep the cupcake sheet with butter and flour
-then add the oatmeal crust. plop down some filling into each cup and finish off with 
3 to 4 berries on top of each.
bake at 350 for 15-20 mins, till center is set.
pop it in the fridge for 30 mins or so just to firm up the filling a bit.
serve with some delish limeade:)
